- 10 large eggs

- 1.5 lbs russet potatoes, diced
- 1/4 c parmesan cheese
- 1/2 c Cheese Brothers Hot Pepper Cheese Curds

Instructions:
- In a 12-inch cast-iron skillet, heat 2 tbsp of olive oil over medium heat. Add the potatoes and salt and sauté until the potatoes are brown and tender. Remove from the pan and let cool.
- In a large bowl, beat the eggs with the parmesan cheese. Stir in the salami and potatoes.
- Add butter to the pan and melt over medium heat. Add the egg mixture in the pan and reduce the heat to low. Top with the cheese curds. Cook until the eggs are almost set, 6 to 7 minutes.
- Heat the broiler and broil the frittata 6 inches from the heat until the eggs are perfectly set, about 2 minutes. Gently loosen the frittata with a spatula and slide onto a plate to serve.
